What is the best aquarium temperature?
The best temperature is a stable value inside the shared range of every animal in the system. Many tropical community aquariums use 24–26°C (75–79°F), and many mixed reefs use 24–27°C (75–81°F), but coldwater and specialist species can fall far outside those bands.
Start with exact species, not broad labels such as tropical or coldwater. Find the highest minimum temperature and the lowest maximum. If those values do not overlap, the animals do not share a long-term temperature band. Even when they overlap, check salinity, pH, hardness, oxygen, flow, adult size, behavior, diet, and disease risk.

How fast should temperature change?
There is no universal rate. Make small monitored changes and follow species guidance.

Zebra danios, white clouds, discus, German blue rams, clown loaches, hillstream loaches, and corydoras can all be sold as freshwater aquarium fish while requiring very different temperature and oxygen conditions.
